Ingredients
- 2-3 smoked chicken breasts cooked and shredded
- 4 cups chicken broth
- 2 carrots chopped
- 2 celery stalks chopped
- 1 onion chopped
- 2 cloves garlic minced
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 8 ounces egg noodles
Instructions
- Preheat your Dutch oven over medium heat.
- Add the olive oil to the Dutch oven and heat it until shimmering.
- Add the carrots, celery, and onion to the Dutch oven and cook until softened, about 5 minutes.
- Add the garlic and cook for 1 minute more, until fragrant.
- Stir in the flour and cook for 1 minute more.
- Gradually whisk in the chicken broth.
- Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
- Add the shredded chicken and egg noodles to the soup and cook for an additional 5 minutes, or until the noodles are tender.
- Stir in the parsley and thyme.
- Season with salt and pepper to taste.

For a richer flavor, use smoked chicken broth instead of regular chicken broth.
